What you'll need

  • 3 ripe but firm pears

  • 1 small wheel or wedge of Brie

  • 2 tablespoons honey, plus more for drizzling

  • 1 tablespoon olive oil

  • 1–2 sprigs fresh rosemary

  • Pinch of flaky sea salt

  • Crusty artisan bread

  • Optional: a handful of walnuts or pecans

Roast the pears

  1. Heat oven to 400°F.

  2. Slice pears into wedges and remove the cores.

  3. Place them on a baking sheet.

  4. Drizzle lightly with olive oil and honey.

  5. Scatter a little rosemary over the pears.

  6. Roast 15–20 minutes, turning once, until tender and golden around the edges.

Build the board

Place the Brie in the centerĀ of a wooden board.

Arrange the warm roasted pears around one side of the Brie, slightly overlapping them.

Tuck in:

  • Warm slices of crusty bread

  • A small handful of walnuts or pecans

  • A few fresh rosemary sprigs for color

Finish everything with a generous drizzle of honeyĀ and just a tiny sprinkle of flaky sea salt.

The Rustic Haven touch

Don't make it too perfect. Let the pears spill naturally around the Brie, let the rosemary wander across the board, and leave a little breathing room between everything.

Put it in the middle of the table and let everyone reach in. That's the whole idea.Ā šŸ¤Ž
